The Enigma of Ferment: From the Philosopher's Stone to the First Biochemical Nobel Prize

The Enigma of Ferment: From the Philosopher's Stone to the First Biochemical Nobel Prize
This popular account of the history of ferment takes the reader on a fascinating journey from its obscure origins in medieval medicine and alchemy to the modern concept of the enzyme. During the 19th century, the question of the nature of the ferment led to a long and bitter conflict between those that believed in a vital force peculiar to the living cell and those that looked for a more chemical explanation. The book takes an in-depth look at the events of 1897 when Eduard Buchner demonstrated that cell-free extracts of yeast could catalyze alcoholic fermentation, putting an end to ?vitalism? and at the same time earning him a Nobel Prize, the first to be awarded for purely biochemical work.

Eduard Buchner - Eduard Buchner (May 20, 1860 -- August 13, 1917) was a German chemist and zymologist, the winner of the 1907 Nobel Prize in Chemistry for his work on fermentation.

Carl-eduard von Bismarck - Carl-Eduard von Bismarck (born February 16 1961 in Zurich, Switzerland) Great-great grandson of Otto von Bismarck and German politician. Educated in New York and at UCLA in Los Angeles, California, Carl-Eduard von Bismarck first entered German politics when he was elected to the town council of Aumühle in the state of Schleswig-Holstein in February 1998 (re-elected in 2003).

Eduard von Martens - Eduard von Martens (sometimes Carl or Karl Eduard von Martens) was a German zoologist. Born in Stuttgart in 1831, von Martens attended universities in Tübingen, Stuttgart and Munich, graduating from the University of Tübingen in 1855.

Zymology Zymology is the science of fermentation. Zymology is occasionally known as zymurgy. ...if asked, in what consists the chemical act whereby the sugar is decomposed... Fermentation Fermentation can be simply defined, in this context, as the conversion of sugar molecules into alcohol and carbon dioxide by yeast enzymes. It deals with the practical issues of brewing. The German eduard buchner, winner of the 1907 Nobel Prize in chemistry, later determined that fermentation was actually caused by a yeast secretion that he termed zymase. ...I am completely ignorant of it...."
